For an elegant weekend brunch or your go-to weekday evening roast, you will need a side dish that fits Paleo proportions. Bite-size is often the answer, and Brussels sprouts fit the bill perfectly. They are mini-cabbages related to mustards, turnips, broccoli, and, you guessed it, cabbages.
Now we all know them for their strong smell, but this merely arises from overcooking, so if fear of their rich hydrogen sulfide gas has you hiding in another room, it is time that you learned how to cook Brussels sprouts properly.
Over-boiled sprouts simply will not do. If you are going to eat them and actually enjoy them, you will have to do it right. The trick to cooking the perfect Brussels sprout is to cook it fast over high heat or broil it quickly in the oven, but of course, it is tasty raw too.
Try to clean and prepare just as much as you need for your meal at one time because when reheated, they will give off that memorable smell.
Brussels sprouts are rich in vitamin C and vitamin K, as well as host to a group of phytonutrients called glucosinolates, available in all Brassicas, so health-wise, they are good for you.
Taste-wise, they complement many meat dishes – roasted chicken, white wine braised rabbit, grilled scallops, you could even try a Brussels hash with hazelnuts and capers. https://paleoleap.com/eggs-benedict-and-ham/
